Il Carretto Pizza started as a mobile pizzeria in 2010 and have since evolved in becoming one of the region best pizza institutions.
Since the beginning our committment was to create rustic traditional sourdough pizza. Our dough is our strength. It is made using only top quality Australian stone ground unbleached organic flour, filtered water, extra-virgin olive oil, salt and sourdough starter. The dough is let to ferment naturally, which means that the time it rises depends on many factors including temperature, humidity and activity of the sourdough culture. This process of natural leavening creates a light, easy to digest pizza.
We do not offer Gluten Free alternatives. Due to our small set up and only having one Oven to cook from we cannot guarantee there will be no flour contaminating our final product. Giving a false sense of security to sufferers of Celiac Disease and putting them at risk is a morally questionable act in our opinion!
Our Sourdough base is properly fermented and many with gluten intolerance have reported not having or having considerable less reactions to other pizza dough. You are welcome to BYO any Gluten Free food from home or surrounding businesses at any of our pizza night! We are very supportive of that!
